Finally, the first day of summer! After what seemed like the longest winter EVER, it’s a breath of fresh air. I love summer foods and am always up for a great BBQ, but sometimes it’s just.too.HOT to cook, which is when it’s time to bust out the trusty crockpot…
When you start getting burnt out by burgers and hot dogs, make this. I served it over polenta, but it would also be great as a sandwich, in quesadillas or tacos, or for sliders…anything goes!
Balsamic Roast Beef
from Add a Pinch1 (3-4 pound) bottom round roast (or other boneless beef piece)
1 cup beef broth
1/2 cup balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon crushed red pepper flakes
5 cloves garlic, choppedPlace beef in crockpot. Mix all remaining ingredients together and pour on top of beef. Cook on high for 4 hours or on low for around 6-7 hours.
Break meat apart with two forks and spoon gravy over it before serving.

Wow – I do love a good crockpot meal. We in Phoenix have been in “summer” mode since probably March. Ugh.
