Happy Friday! And happy snow day to us! The temps are in the single digits (below zero with the wind chill factor) and the snow has been coming down since early last night. Most roads and businesses are closed. It’s cooooooold!!!!!
Today’s weather calls for a meal like this.
This dish was introduced to me by a friend a LONG time ago, and I hadn’t made it in years…like since before Bella came along. On a recent day like today, having all the ingredients in the house, I threw it together for an easy, comforting dinner.
Now if you’ll excuse me, I’m off to do some baking…it is a snow day, after all!
Beefed Up Biscuits

1 pound ground beef (ground turkey works, too!)
3/4 cup chopped onion
1/4 cup chopped bell pepper
1 cup (8 ounces) tomato sauce
2 teaspoons chili powder
1/2 teaspoon garlic powder
salt and pepper
1 can (8 ounces) biscuits – any type
1 1/2 cups shredded cheddar cheese
Preheat oven to 375 degrees. Brown beef in a pan with onion and pepper. Drain and return to pan. Add tomato sauce and spices and stir. Simmer for around 15 minutes.
Meanwhile, spray a 9×9 baking dish. Separate each biscuit and place bottom halves in dish. Put 3/4 cup cheese in meat mixture and spoon on top of biscuits. Add top halves and sprinkle with remaining cheese.
Bake for around 20-25 minutes.
