Butternut Squash Mash

I have to say, this Whole30 stuff is no joke. Even the second time around. But the truth is, it DOES make a difference. Even one week in. I feel so much better than I did 8 days ago, and once again I’m sleeping like a rock.

Obviously I love food…I mean, duh, I spend a good amount of time blogging about it! And I know you all do too, otherwise you wouldn’t be reading it 😉 There are a lot of sacrifices that are made on Whole30, but the pros really outweigh the cons.

Take this side, for instance…


No sacrifices here. It’s so good, and good for you too, which makes it even better!

Butternut Squash Mash
slightly adapted from Just Paleo

1 large butternut squash, peeled and cubed
3 cloves garlic
2 tablespoons ghee
1/3 cup coconut milk
salt and pepper
chopped fresh sage leaves (for garnish)

Add squash to a pot of boiling water. Cook for around 20 minutes or until tender. Drain.

Put squash in mixing bowl and add garlic, ghee, milk, salt and pepper. Beat until smooth. Garnish with sage.
