We had a beautiful weekend here in NJ…a nice reprieve from the “polar vortex”. It was nice while it lasted. More snow and cold this week 🙁 Enough is enough!
I came across this meal while browsing Pinterest. It’s perfect for a cold night when you need something comforting (which is when I made it – hit the spot!), plus it only takes about 20 minutes to make. It’s got a nice little kick to it, so if you don’t want it too spicy, cut back on the cayenne…especially since I added a bit more than was called for.
Now, when can I start using my grill again?
Chicken Lazone
adapted from Plain Chicken1/2 teaspoon salt
3 teaspoons garlic powder
3/4 teaspoon cayenne pepper
2 pounds chicken tenders
1/4 cup butter, divided
1 1/2 cups heavy cream
1 cup frozen peas
1/2 pound angel hair pasta, cooked al denteCombine all spices in a bowl. Sprinkle over both sides of chicken.
Melt half the butter in a pan over medium high heat. Add chicken and cook until done, around 7-8 minutes.
Add cream and remaining butter to pan. Lower heat and cook until sauce thickens, around 5-6 minutes. Stir in peas and cook through, then add pasta and toss until evenly coated with sauce. Remove from heat and serve immediately.
