Trust me, you want to bake these this weekend. And then again next weekend.
Cinnamon Chip Snickerdoodles
from She Makes and Bakes
1/2 cup butter, softened
1 cup sugar
1 teaspoon cream of tartar
1/4 teaspoon baking soda
1/2 teaspoon pure vanilla extract
1 1/2 cups AP flour
3/4 cup cinnamon chips
1 cup cinnamon sugar
Preheat oven to 375 degrees. Line cookie sheets with parchment paper.
Cream butter and sugar together until light and fluffy. Add egg and beat on low until combined. Add cream of tartar, baking soda and vanilla. Mix until combined.
Mix in flour until incorporated, then fold in chips.
Form dough into one inch balls and roll in cinnamon sugar (to make cinnamon sugar, combine 1 cup sugar with 1 tablespoon cinnamon). Place balls about 2 inches from each other. Bake for 12 minutes, or until edges are set. Cool on wire racks.
Makes about 2 dozen cookies.
