Cinnamon Chip Snickerdoodles

Happy Friday! And for most, after today begins a long holiday break. I still have lots to do to prepare for Christmas, from menu planning to wrapping. I just wish I liked wrapping as much as I do menu planning…

What do I like even MORE than menu planning? These delicious cookies.

Trust me, you want to bake these this weekend. And then again next weekend.

Cinnamon Chip Snickerdoodles
from She Makes and Bakes

1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon cream of tartar
1/4 teaspoon baking soda
1/2 teaspoon pure vanilla extract
1 1/2 cups AP flour
3/4 cup cinnamon chips
1 cup cinnamon sugar

Preheat oven to 375 degrees. Line cookie sheets with parchment paper.

Cream butter and sugar together until light and fluffy. Add egg and beat on low until combined. Add cream of tartar, baking soda and vanilla. Mix until combined.

Mix in flour until incorporated, then fold in chips.

Form dough into one inch balls and roll in cinnamon sugar (to make cinnamon sugar, combine 1 cup sugar with 1 tablespoon cinnamon). Place balls about 2 inches from each other. Bake for 12 minutes, or until edges are set. Cool on wire racks.

Makes about 2 dozen cookies.

Melissa, where do you find the cinnamon chips. I’ve had a hard time finding these for the past few years. Thanks, Barb

I’ve found them in Shoprite on occasion. They don’t carry them consistently, though. You can also order them on Amazon.
