Crockpot Sweet Potato Beef Stew

Hope everyone had a nice weekend! We had some fabulous weather – compared to the frozen tundra we’ve been living in, it almost felt like summer! No matter what the temperature, I always get excited about a good crockpot meal. It’s always nice to come home and have dinner ready and waiting.

Crockpot Sweet Potato Beef Stew
from Amee’s Savory Dish

1 clove garlic, chopped
1 bay leaf
2 pounds stew meat, cut into cubes
2 sweet potatoes, peeled and cut into thick cubes
5 carrots, peeled and cut into chunks
1 celery stalk, chopped
1 onion, chopped
5 cups beef broth
1 tablespoon tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon thyme
1 teaspoon paprika
1 teaspoon salt
1/2 cup red wine

Combine all ingredients in crockpot. Cook for 5 hours on high, or 8-10 hours on low. Add salt and pepper to taste, if necessary.
