Fresh Pear, Apple & Cranberry Crumble Pie

I am SO excited for Thanksgiving. It’s definitely my favorite food holiday of the year. Too many great dishes all at one table. Enough to make you stuffed for days. Bring it on…

Unfortunately, I couldn’t get any great pictures of this pie. But don’t let it stop you from making it. I used fruits that I had on hand and threw them all together for one easy and DELICIOUS dessert. A definite must for your Thanksgiving table!

Just make sure you’ve got vanilla ice cream, too 🙂

Fresh Pear, Apple & Cranberry Crumble Pie
heavily adapted from Tracey’s Culinary Adventures

for the crumble:
1 cup AP flour
1/2 cup rolled oats
1/2 packed brown sugar
1/4 teaspoon salt
1 stick butter, melted

for the filling:
3 pounds pears and apples (I used Bartlett, Granny Smith and Macoun), cored, peeled and diced
2/3 cup fresh cranberries
1 1/2 tablespoons fresh lemon juice
2/3 cup sugar
1/4 cup AP flour
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 pie crust

Preheat oven to 350 degrees. Place oven rack in center of oven.

In a bowl, combine all crumble ingredients, using fingers to mix. Set aside.

In another bowl, toss fruit with lemon juice. In a separate bowl, combine sugar, flour, salt, cinnamon and nutmeg. Mix and then add to fruit. Toss well to combine.

Scoop filling into piecrust. Sprinkle crumble topping over fruit, pressing it between your fingers to form clumps.

Place pie on baking sheet and bake for 55-65 minutes, rotating halfway after 30 minutes. Serve warm or cool. Can be stored at room temp for 2 days, or in fridge.
