One of my favorite things, incase you didn’t already know, is garlic. So naturally, this dish rocked. And of course, I doubled the amount of garlic…as usual
I really try not to keep bread in the house, and I can’t believe I resisted it during this meal (although the homemade potato chips were a good substitute). This definitely warrants some serious amounts of crusty bread. Gotta sop up all the good stuff!
Quick, easy and DELICIOUS!
Garlic Shrimp with Chorizo
barely adapted from scarpetta dolcetto
2 pounds shrimp, peeled and deveined, tails off
8 ounces Spanish style chorizo, sliced
1/4 cup extra virgin olive oil
salt and pepper
8 garlic cloves, sliced thin
chopped parsley for garnish
Preheat oven to 425 degrees. Season shrimp with salt and pepper. Toss all ingredients together except parsley. Transfer to baking dish.
Bake for around 10 minutes, until shrimp turn pink. Sprinkle with parsley and serve.
