I get all giddy when onions are involved. And peaches? On the grill? Seriously, how can you go wrong…
Grilled Balsamic Chicken with Peaches and Onions
adapted from Whole Foods Market
2 tablespoons balsamic vinegar
1 tablespoon maple syrup
6 tablespoons extra virgin olive oil
salt and pepper
6 boneless chicken breasts
6 peaches, halved and pitted
3 large onions, cut into thick slices
Combine vinegar, syrup, 1/4 cup oil, salt and pepper in a ziploc bag or long narrow container. Add chicken, coat both sides, and refrigerate for at least 2 hours, turning frequently.
Turn on grill and heat. Grill chicken for around 5 minutes on each side, depending on thickness. Brush a little oil on peaches and onions and add to grill. Cook until slightly charred. Serve.
