Grilled Filet Mignon with Sauteed Mushrooms

What a beautiful weekend!  We were away so we didn’t do any grilling, but we did make this delicious dish earlier last week.  You really have to appreciate the simplicity here.  A gourmet style meal made within minutes – perfect for a busy work night!

The mushrooms actually took longer to make than the steak, although I eat it rare, so if you like it more well done that won’t be the case. This piece, which was about an inch and a half thick, cooked for about 3 1/2 minutes on each side. And as you can see, Bella wanted absolutely nothing to do with it 🙂

Grilled Filet Mignon with Sauteed Mushrooms

Filet mignon steaks
salt and pepper
1 1/2 tablespoons butter
1 pound mushrooms, sliced thick
1/2 teaspoon thyme
2/3 cup dry red wine

Season filet on both sides with salt and pepper. Place on preheated grill. Cooking time depends on thickness of cut as well as what temperature you like. Refer to this chart for more info.

Meanwhile, melt butter in a skillet. Add mushrooms and season with salt, pepper and thyme. Cook until brown over medium high heat. Lower heat and add wine. Cook until wine is reduced.

Remove steaks from grill and transfer to plates. Top with mushrooms and serve.
