Oh, summer – you really have arrived. Close to two weeks of temps in the mid 90s, which shouldn’t happen until August! Way too early for me…but even so, it won’t stop me from grilling pizza.
Making pizza is the most delicious way to clean out your fridge 🙂 Everything that landed on this one was already handy. And the combination was delicious!
Grilled Pizza with Figs, Prosciutto, Peaches & Arugula
pizza dough (homemade or store bought)
extra virgin olive oil
prosciutto, cut into chunks
3 peaches, cut into chunks
dried figs, chopped
red onion, chopped
ricotta salata, broken into pieces
2 cups arugula
balsamic vinegar
grated pecorino romano cheesePreheat grill on high heat. Roll dough out (use flour to help) and brush one side with oil.
Place directly on grill and let cook for around 5 minutes. Flip over and add all ingredients up to and including ricotta salata. Close grill and cook for 5 minutes or a bit longer.
Remove from grill and add arugula. Drizzle with balsamic and sprinkle grated cheese on top. Serve immediately.

Delicious combination of toppings! I can’t wait to try this!
