This time of year makes you crave those stick-to-your-ribs meals. The kinds that simmer on the stove and make the house smell great. There could be snow on the ground, football on the tv, leaves rustling outside…you get the picture.
This chili will make you feel downright cozy. Snuggle up and enjoy!
Hearty Beef and Chorizo Chili
heavily adapted from A Palatable Pastime2 pounds stew meat
1 chorizo, chopped
2 large yellow onions, chopped
4 garlic cloves, chopped
salt and pepper
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon cinnamon
1 tablespoon cumin
1 can crushed tomatoes
2/3 cup beef broth
diced avocado for toppingBrown beef, chorizo and onion in a large pot. Drain fat. Add garlic and spices.
Stir in tomatoes and beef broth, and simmer for one hour (you could also transfer to a crockpot and cook on low for 8-10 hours).
Top with avocado and serve.

So easy and delicious! Everyone loved it. I added some chopped potatoes to make it more of a stew and served it with rice and crusty bread. Will definitely make again. Thank for the recipe!!
