This dish is definitely a keeper! Quick and easy…and the meat was so tender. I served it with cheesy cauliflower and sauteed spinach for the perfect low carb meal!
Next time I’ll definitely throw an onion in there – can’t believe I forgot to do that!
Instant Pot Turkey Breast with Gravy
3 lb frozen turkey breast (defrosted, leave netting on)
1 tablespoon extra virgin olive oil
salt, pepper, garlic powder
1 cup chicken broth
1 teaspoon xantham gum
Season turkey with spices. Set Instant Pot to saute function. Add oil and turkey. Saute turkey breast on all sides, then add chicken broth. Set on manual setting for 30 minutes. Allow pressure to release naturally, or release after 15 minutes.
Take a 1/2 cup of liquid out of the pot and place in a bowl. Add xantham gum and stir. Mix into pot until liquid thickens. Add more xantham gum if necessary.
Let rest for 5 minutes before slicing.
