I love carbs so much. I really do. But unfortunately, they’re my enemy. So I do my best to cut back on them when I can. And with a recipe like this, I never feel like I’m missing them…
Yep, you guessed it…no rice. And still lots of taste! You won’t miss it at all.
Low Carb Stuffed Peppers
inspired by Carmen’s Kitchen
6 bell peppers
2 tablespoons extra virgin olive oil
1 1/2 pounds ground beef
salt and pepper
1 onion, chopped
3 garlic cloves, chopped
1 (15 ounce) can diced tomatoes, drained
1/2 cup chopped fresh parsley
1 cup shredded cheese (use whatever you like…I used mozzarella)
Preheat oven to 350 degrees. Hollow out peppers and set aside.
Heat oil in a pan. Add beef, onion and garlic and cook for 5 minutes. Season with salt and pepper. Add tomatoes and parsley and cook another 5 minutes.
Stuff peppers with meat mixture. Bake for 15 minutes. Top peppers with cheese and cook another 5 minutes.
