Banana Oatmeal Pancakes
adapted from The Hungry Wife

Dry Ingredients:
1 cup AP flour
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon nutmeg
1/4 cup quick-cooking oats


Wet Ingredients:
1 egg, lightly beaten
1 cup 2% milk
1 tablespoon vegetable oil
2 tablespoons sugar
1 cup mashed ripe bananas
cinnamon
confectioners’ sugar


Sift together the flour, salt, baking powder, and nutmeg.  Add the oats and mix well.  In a separate bowl, stir together all of the wet ingredients.  Make a well in the dry ingredients and stir in the wet ingredients just to combine.
Lightly oil a skillet or griddle and place on medium-high heat.  Use about ¼ cup of batter for each pancake and cook until bubbles appear on the top, about 1 to 1 ½ minutes.  Cook on the second side until golden brown, about 1 minute.  Sprinkle with cinnamon and confectioners’ sugar.  Serve hot.
Makes 4 servings.

    I found these on a Google search this morning and what a treat! I am not a cook and haven’t made a successful pancake in my life until this morning. These went together quickly, cooked even faster and tasted delicious. My kids wolfed them down like candy, even my picky won’t-eat-anything 1 year old son. I added in some vanilla and they tasted just like banana bread with a nice texture added from the oats. Thanks!
