Mexican Chicken Wontons

You guys know how much I love recipes that clear out stuff you have in the fridge. Am I the only one that get that “feel good” feeling from it?

I hope not. But I wouldn’t be surprised if I was.


Either way, these will definitely make you at least a little giddy 🙂

Mexican Chicken Wontons
adapted from The Jey of Cooking

1 cooked chicken breast, shredded
1 cup shredded cheddar cheese
1/2 cup pepper jack cheese
1 can chopped green chiles
2 1/2 teaspoons chili powder
1/2 teaspoon garlic powder
wonton wrappers
oil for frying

Mix chicken, cheese, chiles and spices together. Place about a tablespoon of filling over to one side of a wonton wrapper. Fold over on an angle and seal by pressing around edge with a fork.

Heat oil in a skillet over medium high heat. Add several wontons at a time and flip when light brown. Remove and place on paper towel lined plate to drain.

Serve with salsa, sour cream, guacamole…
