Peanut Butter and Nutella Cake

My brother Pete turned 40 last week, and his cake request was “something with peanut butter and Nutella”. I barely had time to cook dinner all week, let alone bake a cake, so I came up with a simple combo that turned out to be delicious. Everyone loved it…especially me, since it took practically no time to make 🙂

We arrived for dinner at my brother-in-law’s restaurant with cake in tow, and dug into it after a delicious dinner.

Use your favorite yellow cake recipe, or do what I did and use a boxed mix…gasp!

Peanut Butter and Nutella Cake

1 box yellow cake mix (or your favorite recipe)
1 jar Nutella
2 sticks butter, softened
2 cups confectioners’ sugar
1 cup peanut butter
2 teaspoons pure vanilla extract
pinch of salt
1/4 cup half and half or milk

Pour prepared cake mix into two greased 9 inch round pans. Bake according to recipe instructions. Let cool completely.

Mix butter and sugar on high speed until creamy. Add peanut butter, vanilla and salt, and beat until smooth. Add milk a little at a time if necessary to reach desired consistency.

Place one cake layer on serving platter. Top with Nutella (yes, use the whole jar!). Add second cake layer and frost top and sides with peanut butter frosting.
