Pressure Cooker (Instant Pot) Carnitas

Talk about a delicious and EASY meal! Our friends loved this one! Healthy, too!

Pressure Cooker (Instant Pot) Carnitas

2 pounds pork shoulder/butt, cubed
2 teaspoons canola oil
2 teaspoons kosher salt
1 teaspoon cumin
1 teaspoon dried oregano
½ teaspoon pepper
1 large onion, chopped
3 garlic cloves, minced
1 jalapeño pepper, diced
2 bay leaves
juice of 2 limes
1½ cup orange juice
limes, cilantro and chopped radishes for garnish

Press sauté function on Instant Pot. Add oil, then pork butt, and brown on all sides for 5-10 minutes. Add remaining ingredients and mix well to combine.

Press cancel, secure lid, close off pressure valve then press manual to high pressure and press the up button until the time hits 30 minutes. Once time is up, let the pressure release naturally for 20 minutes, then remove lid. Meanwhile, turn oven broiler on high.

Remove meat and onions and place on a baking sheet or oven roasting pan. Pull apart meat slightly using two forks. Squeeze fresh lime juice on top and place under broiler for a few minutes or until pork begins to brown and crisp.

Garnish with lime wedges, cilantro and radishes.
