Rocky Road Chocolate Cake

Knowing the chocolate fiend that my mom is, I had to come up with something a little different for her birthday cake that included lots of it. She couldn’t decide on a cake herself and left it up to me…decisions, decisions!

Then I thought, why not make my dad happy too, and make a cake that takes after his favorite ice cream flavor? I found this cake online and adapted it just a bit (since dad can’t really eat nuts), and came up with this…


Well, that was easy.

Rocky Road Chocolate Cake

1 box Devil’s Food cake mix
4 eggs
1 cup mayonnaise
1 cup water
1 cup chopped walnuts
1 cup mini marshmallows
1 cup semi-sweet chocolate chunks
chocolate frosting

Preheat oven to 350 degrees. Grease two 9 inch round cake pans. Combine eggs, mayo and water with cake mix and mix on low until just combined. Increase to medium speed and beat for around 2 minutes. Pour into cake pans and bake for around 25 minutes.

Combine nuts, marshmallows and chocolate in a bowl. Place first cake layer on serving plate. Add frosting on top, then cover with around 1/3 of the nut mixture. Top with second cake layer. Frost top of cake and pile on the rest of the nut mixture.
