Shrimp Scampi over Linguine

Well, here it is, St. Patrick’s Day. While every other food blogger on the planet is posting their Irish influenced meals and boozy creations, I’m sticking to my pasta 😉

I didn’t get any corned beef and cabbage this year and I’m a little bummed about it! May have to change that tonight…

One of the simplest meals, yet one of the most delicious. It’s a weeknight favorite since it takes no time at all to make. Great for company, too!

Shrimp Scampi with Linguine
slightly adapted from Mario Batali

1 pound linguine
1-2 dozen shrimp, depending on size
2 tablespoons extra virgin olive oil
5 garlic cloves, chopped
2 tablespoons butter
1 tablespoon parsley, chopped
crushed red pepper, to taste
salt
1/2 cup white wine
zest of 1/2 lemon

Cook pasta according to package instructions. Meanwhile, add oil to large pan and once it’s hot, add shrimp. Sprinkle salt on them and saute until light pink.

Add garlic, parsley, butter and red pepper. Deglaze with wine and saute until shrimp are cooked through.

Drain pasta and add to pan. Toss until evenly coated with shrimp and sauce. Add lemon zest and toss again.

Plate and drizzle a little oil on top. Add more red pepper, if desired, and serve.
