Simple Grapefruit Vinaigrette

Homemade salad dressing is just too easy. There’s really no reason to go with store bought. I’m always on the hunt for good recipes, and this one caught my eye since I had a few grapefruits I needed to use.

I was thrilled with the results – it tasted so good with a few different salads that I made. What a great way to use up winter citrus!

Simple Grapefruit Vinaigrette
from Aggie’s Kitchen

1/4 cup freshly squeezed grapefruit juice (around 1/2 of a grapefruit)
1/4 cup light olive oil
1 teaspoon honey
salt and pepper to taste

Combine all ingredients in a jar or container. Seal tightly and shake well until fully combined. Taste and adjust salt and pepper accordingly.

Store in refrigerator for up to 3 days.
