Spicy Plantain Chips with Mango Guacamole

Today is day 15! Halfway through Whole30. I have to say, it’s been a lot easier than I thought it would be. And it’s probably because of food like this.


Who needs tortilla chips? Not me.

Spicy Plantain Chips with Mango Guacamole

3 green plantains, peeled and sliced
coconut oil
chili powder
garlic powder
3 ripe avocados
1 mango, cut into chunks
1/2 cup chopped cilantro
juice from 1 lime

Heat coconut oil in a skillet. Add plantain pieces in batches and season with chili powder, garlic powder and salt. Fry on both sides until golden brown. Transfer to paper towel lined plate and let cool.

Mash avocado with cilantro and lime juice and add salt. Stir in mango and transfer to serving bowl. Serve.
