I made this brisket a while ago but never got around to blogging it. Looking at the picture is making me wish I had some right about now! SO good.
A quick Whole30 update (and by the way, I’ve been craving red meat like MAD!) – today is day 17 – feeling great, more energetic, sleeping way better than usual, people are noticing weight loss.
Tonight, I’m going to one of my favorite restaurants EVER…an Italian restaurant that’s impossible to get into…and I will be STRONG! (pray for me)
Sweet and Sour Braised Beef Brisket
4 pounds beef brisket
2 cups sliced yellow onions
1 cup sliced mushrooms
1 cup diced carrots
1 cup diced celery
1 ½ cups ketchup
¼ cup white vinegar
1/4 cup Worcestershire sauce
½ cup soy sauce
1 cup brown sugar
1 ½ cups water
Preheat oven to 350 degrees. Place the brisket in a large roasting pan. Place onions, mushrooms, carrots, and celery on top and around the sides of the brisket.
In a bowl, whisk together ketchup, vinegar, Worcestershire sauce, soy sauce, brown sugar, and water. Pour the sauce over brisket.
Cover brisket with foil and cook 3 – 3 ½ hours until fork tender. Remove brisket from oven and let sit for 15 minutes before carving.
