Summer is the time for soaking in the sun, taking vacations, and parking your butt in the sand and water…with a fun cocktail.
This has been one of my favorites so far. A great one to keep in mind if you’ve got some leftover juicy watermelon from the night before. Yum!
Watermelon Margaritas
from Cooking Light2 teaspoons sugar
lime wedges
(the above ingredients are optional, if you want to rim glasses with sugar…I didn’t use them)
4 cups cubed seeded watermelon
1/2 cup tequila
2 tablespoons sugar
3 tablespoons fresh lime juice
1 tablespoon Triple SecRub rims of 6 glasses with lime wedges. Put 2 teaspoons sugar in a plate and dip each glass into sugar. Set aside.
Combine watermelon and remaining ingredients in a blender and blend until smooth. Fill each glass with a little ice and pour. Garnish with lime if desired.
Serves 6.
