Watermelon Margaritas

Summer is the time for soaking in the sun, taking vacations, and parking your butt in the sand and water…with a fun cocktail.

This has been one of my favorites so far. A great one to keep in mind if you’ve got some leftover juicy watermelon from the night before. Yum!

Watermelon Margaritas
from Cooking Light

2 teaspoons sugar
lime wedges
(the above ingredients are optional, if you want to rim glasses with sugar…I didn’t use them)
4 cups cubed seeded watermelon
1/2 cup tequila
2 tablespoons sugar
3 tablespoons fresh lime juice
1 tablespoon Triple Sec

Rub rims of 6 glasses with lime wedges. Put 2 teaspoons sugar in a plate and dip each glass into sugar. Set aside.

Combine watermelon and remaining ingredients in a blender and blend until smooth. Fill each glass with a little ice and pour. Garnish with lime if desired.

Serves 6.
