Pumpkin Butterscotch Cookies
slightly adapted from One Charming Party
1 1/2 cups sugar
1/2 cup shortening (or butter)
1 teaspoon pure vanilla extract
1 cup canned pumpkin
2 cups AP flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup butterscotch chips
In another bowl, combine flour, salt, baking soda, baking powder and cinnamon. Add to pumpkin mixture and mix until just combined. Stir chips in with a spoon.
Drop spoonfuls onto sheet pans lined with parchment paper. Bake for about 12-15 minutes.
Makes approximately 30 cookies.
