Butterscotch Oatmeal Cookies

Happy Friday! Day 11 of Whole30 for me and yeah, I baked these cookies. Didn’t eat a crumb. But from what the guys at work told me, they were damn good.


I love me some butterscotch chips. Sigh.


Butterscotch Oatmeal Cookies
slightly adapted from Fearless Homemaker

3/4 cup (1 1/2 sticks) butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon pure vanilla extract
1 1/4 cups AP flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups oats (quick or regular rolled)
2 cups butterscotch chips

Preheat oven to 375 degrees. Beat butter and sugars until well blended. Add vanilla and eggs. Beat well.

Combine flour, baking soda, cinnamon and salt in a bowl. Gradually add to sugar mixture. Mix until well blended. Stir in oats and chips.

Drop onto ungreased cookies sheets by heaping teaspoons. Bake 8-10 minutes or until golden. Remove and let cool for a few minutes, then transfer to wire racks.

Makes about 4 dozen cookies.
