Gingersnap Cookies

What’s the best part about making cookies?  Even if you have a least favorite type, you know it’s still good enough to eat.  After all, it’s a cookie 🙂


These don’t come close to the top of my list, but they’re definitely delicious enough to enjoy with a cold glass of milk or a hot cup of tea.  I know a lot of people are gingersnap fans, so here you go – a nice, easy recipe for you!

Gingersnap Cookies
slightly adapted from Heather’s Bytes

3/4 cup shortening
1 cup sugar
1/4 cup dark molasses
1 egg
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
2 cups AP flour

Preheat oven to 350 degrees. Cream shortening and sugar together until light and fluffy. Add egg and beat well, followed by molasses. Add ginger, cinnamon, baking soda and salt and mix well. Finish with flour; mix until combined.

Form dough into 1 inch balls and place on ungreased baking sheet. Spray the bottom of a glass with cooking spray and dip into sugar. Press down on each ball so that dough flattens and sugar is added to the top.

Bake for around 9 minutes. Let cool on sheet for 5 minutes before transferring to rack.
