Ham and Egg Cups

I love brunch! I love hosting brunch, too. And in the past few weeks, I’ve hosted 3 of them. This dish was a part of each one, and why not – it takes 5 minutes to throw together and is a HUGE hit. Great for all of you low carbers, too!


Trust me, you’ll need to make extras, because they go FAST!


Ham and Egg Cups

12 slices ham, thinly sliced
12 eggs
shredded cheddar cheese
salt and pepper

Preheat oven to 400 degrees. Spray a muffin tin with cooking spray. Place one piece of ham in each cup, pressing down slightly. Crack an egg in each cup (you can also scramble them first, then pour a little into each, if you prefer scrambled). Sprinkle with cheese and add salt and pepper.

Bake for 15 minutes. Let cool for a few minutes before removing from pan (using a spoon gently will help).
