Pumpkin Pancakes

These were the first product of the first can of pumpkin that I cracked open this season.


Oh, don’t you worry – there’s more where that came from! 🙂

Pumpkin Pancakes
from Allrecipes

1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups AP flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt

Mix milk, pumpkin, egg, oil and vinegar in a bowl. Combine remaining ingredients in another bowl. Stir into pumpkin mixture until just combined.

Heat griddle or skillet over medium high heat and add butter. Pour batter onto griddle and cook until browned on both sides.

Makes about 12 pancakes.
