Pumpkin Whoopie Pies

Gone in 60 seconds. Seriously. You won’t be able to keep these around long at all.


Don’t want the filling? Just eat the cookies by themselves. Equally as delicious. Well, maybe not equally…

Pumpkin Whoopie Pies

6 tablespoons butter, softened
1 1/3 cups sugar
1 cup pumpkin puree
1 egg
1 teaspoon pure vanilla extract
2 cups AP flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt

Preheat oven to 400 degrees. Beat butter and sugar until fluffy. Add pumpkin, egg and vanilla and mix together.

Combine flour, baking soda, cinnamon and salt in a bowl. Add in batches to pumpkin mixture.

Drop by tablespoonfuls on greased baking sheets. Bake for 12 minutes. Cool. Eat on their own, or make whoopie pies with Nutella in the middle.

    These were so quick and easy to make, but more importantly, they were delicious. I love pumpkin recipes and I happened to have all the ingredients on hand. The cookies would also be great warm, topped with ice cream… which I already requested from my husband, so I’ll have those tonite 😀
