White Chocolate Cupcakes with White Chocolate Cream Cheese Frosting for a Virtual Baby Shower!

Well, here we are again – it’s like deja vu, seeing as we threw one of these just over a year ago for Krystal! She is now expecting her little boy, aka “Cupcake”, very soon. So, we all had to get together once again and bake some of the sweet stuff for the little one and his momma.

Pretty soon Krystal is going to have her hands VERY full with a toddler and a newborn! I wish I could deliver these to her myself, but being on opposite coasts makes it a bit tough. Then again, I could use a trip to Southern California…

White Chocolate Cupcakes with White Chocolate Cream Cheese Frosting
from Baking Bites

for the cupcakes:
1 1/2 cups AP flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup butter, softened
3/4 cup sugar
2 large eggs
4 ounces white chocolate, chopped
1 teaspoon pure vanilla extract
1 cup plus 1 tablespoon milk (I used 1%)

for the frosting:
4 ounces cream cheese, at room temperature
1/4 cup butter, at room temperature
1 ounce white chocolate, melted and slightly cooled
1 teaspoon pure vanilla extract
3 teaspoons milk or cream
2-3 cups confectioners’ sugar

Preheat oven to 325 degrees. Line muffin pans with 18 cupcake liners. In a medium bowl, whisk together flour, baking powder and salt. Set aside.

In a small bowl, melt the chocolate by heating it in 30 second intervals in the microwave. Stir well between intervals and do not overcook.

In a large bowl, cream together butter and sugar until light. Beat in eggs one at a time, followed by melted white chocolate and vanilla. Working in two or three additions, alternate adding in milk and flour mixture, ending with flour. Mix until just incorporated. Divide batter evenly into prepared muffin cups.

Bake for 20-23 minutes until a tester comes out clean. Cool on a wire rack.

To make the frosting, beat together cream cheese, butter and melted chocolate. Add vanilla and milk and beat, then add sugar gradually until desired consistency is reached. Frost cupcakes once they are cooled.
